 Pumpkin Cookies
 
 
Ingredients:
2 1/2 cup bean or rice flour blend
1 tsp. xanthan gum
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 1/2 cups sugar
1/2 cup margarine
1 egg
1 cup canned pumpkin (Libby's Brand)
1 tsp. vanilla
1/2 cup raisins or chocolate chips
 
Instructions:
1.   Preheat oven to 350 degrees F. 
2.  Combine gluten-free flour mix, xanthan gum, baking soda, baking powder, cinnamon, nutmeg and salt in a medium bowl. 
3.  In a mixing bowl, beat margarine and sugar until light and fluffy.
4.  Beat in egg, pumpkin, and vanilla.
5. Add in dry ingredients.
6. Stir in raisins or chocolate chips.
7. Drop by tablespoons onto oil sprayed baking sheet.
8. Bake for 15 to 18 minutes.
