Banana Blueberry Bread

3/4 cup potato starch
3/4 cup cranberry bean flour
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. salt
1 1/2 tsp. xanthan gum
2 eggs -- lightly beaten
1 cup sugar
1/4 cup oil
1 cup blueberries
1/2 cup banana -- mashed
1/2 cup chopped pecans -- or walnuts

Preheat oven to 350 degrees.  Combine flours, cinnamon, nutmeg, baking soda, cream of tartar, xanthan gum, and salt. In a separate bowl, stir together eggs, sugar, oil, berries, and banana. Add to flour mixture and stir just until combined. Stir in nuts. Pour into a greased and floured 9 x 5 x 3 loaf pan. Bake for about 60 minutes or until a toothpick inserted in the middle comes out clean.

 

Joanne's Notes:
Original recipe used 1/2 cup garbanzo bean flour, 1/2 cup cornstarch, 1/2 cup tapioca starch instead of potato starch and cranberry bean flour.
