            Caramel Shortbread Squares

 

Ingredients:
1/2 cup margarine
1 cup granulated sugar
2 Eggs (separated)
1 tsp vanilla
1 1/2 cup white rice flour
2 tsp baking powder
1 cup brown sugar
1/2 cup chopped walnuts or pecans (optional)
1 cup chocolate chips

 

Instructions:
1.   Preheat oven to 300 degrees F. 

2.  Cream together mararine, sugar, egg yolks, vanilla, flour and baking powder.

3.  Press into oiled or cooking spray coated 13x9 glass pan.

4.  Beat egg whites.

5. Add brown sugar and cream together.

6. Pour over shortbread mixture. If using the nuts...put them on top.

7. Bake for 30 minutes in 300 degree oven.

8. Cover with chocolate chips and bake an additional 5 minutes.

9. With spatula, spread melted chocolate mixture, cool completely and slice.
