                       No-Tomato Marinara Sauce

2 Tbsp virgin olive oil
1 medium onion, finely diced
1 garlic clove, minced
3 cups Sweet Red Pepper Puree, see recipe below
1 Tbsp finely chopped parsley
1/4 tsp dried oregano
1/4 tsp dried basil
1/4 tsp salt
1/4 tsp freshly ground pepper

Heat olive oil in a saucepan over meduim high heat for 2 minutes. Add onion.

 
Sweet Red Pepper Puree
 
(double this recipe to make the sauce)
reheat broiler for 8-10 minutes, with rack set 6-7 inches from heat. Line roasting pan with foil. Place 2 large red bell peppers in pan and roast under the broiler for 12 to 15 minutes. (Turn frequently  for even roasting.) Remove from oven and loosen foil from pan. Wrap peppers loosely in foil and allow to cool. When cool, remove skin by peeling with your fingers. Remove stem and seeds, cut peppers into pieces and puree in a blender or food processor. Makes 1 1/2 cups.
