 Pineapple Upside Down Cake

 

 

Ingredients:

1 package Miss Roben's Yellow Cake Mix

3 large eggs or appropriate egg replacement

3/4 cup margarine or butter- for cake batter

3/4 cup brown sugar

1/2 cup margarine or butter, melted

1 - 20 ounce can unsweetened sliced pineapple, drained(save juice)

 

Instructions:

  1. Preheat oven to 350 degree F. 
  2. Prepare yellow cake mix batter using eggs(or substitutes) and 1/2 cup of the reserved pineapple juice. 
  3. Stir brown sugar into melted butter and spread the mixture evenly in bottom of 9 x 13 inch glass pan. 
  4. Arrange drained pineapple in one layer across bottom of pan. 
  5. Pour batter over pineapple pieces. 
  6. Bake 30-40 minutes or until knife inserted into the center comes out clean(cover cake lightly with foil if browns on top before center is done). 
  7.  Cool cake completely before inverting to serve.
