Annie's Salmon Loaf  
 

1 large can of red salmon
1 cup gluten free bread crumbs-soak in 1 cup of hot soy or rice milk
1 tsp salt
1 tbsp margarine
1 onion
2 eggs
1 tsp paprika
2 cloves garlic crushed
1 tsp lemon juice

Soak crumbled bread crumbs in hot milk until well softened. Add the
eggs to the bread and milk. Combine remaining ingredients together
until well blended. Pat into a greased loaf pan and bake in a
moderate oven for about an hour. Cover with foil half way through
baking to prevent the top drying out.
