Banana Bake

3 cup ripe bananas, sliced
1/2 cup pineapple juice
1/2 cup pecan meal
2 tsp maple syrup
1/4 tsp each nutmeg and cinnamon
1/4 cup pecan garnish

Soak bananas in pineapple juice about 30 minutes. Mix drained bananas with
the pecan meal, maple syrup and spices and fill an 8" x 8" glass baking dish.
Bake covered at 425' for 15 minutes. Remove cover and top with finely chopped pecans. Cool and serve.
