Barb’s Macaroons

 

1/2 tsp salt

2 cups shredded coconut

1 1/2 cups granulated sugar

4 egg whites

1 tsp vanilla extract

 

Whip egg whips and salt until forms stiff peaks.  Do not overbeat.  Fold in sugar by Tbsp until sugar is blended.  Combine coconut and vanilla w/egg whites and sugar. Do not beat.  Drop by tsp on parchment paper on cookie sheet. Bake on 35o degree oven for 20 min.  Cool on wire racks.
