 Date Nut Bread

Ingredients:
1 cup chopped dates and/or dried apricots
1  Jonathan apple, finely chopped

3/4 cup boiling water
1/2 cup sugar
4 Tbsp butter or shortening
2 eggs, well beaten
1 cup brown rice flour
1/2 cup tapioca starch
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup chopped walnuts

Instructions:

1.  Preheat the oven to 350 degrees F.

2.  Grease a loaf pan.

3. Pour the boiling water over the dried dates and apricots.

4. Add the chopped apples, sugar and butter/margarine.

4.  Stir to melt sugar and butter, margarine. 

5.  Allow mixture to cool until lukewarm.

6.  Stir in the beaten eggs, flour, baking soda, seasonings and nuts.

7.  Blend well.

8.  Spoon into the loaf pan and bake for about 50-55 minutes.

9.  Cool 15 minutes before removing from pan.
