 Mock Oatmeal

Ingredients:

1/2 brown rice, cooked

1 cup water

acceptable cream substitute

Instructions:

1.  Add approximately double the amount of water and recook.

2.  When the rice is mushy (about 10-15 minutes), add more water if needed and sprinkle in some cream of rice to thicken.

3. It will begin to acquire the texture of oatmeal.

4. Add salt and sugar to your taste. Raisins, nuts, chocolate chips or coconut can be added, too, if desired.

Note: You can a larger quantity and store in the refrigerator for 2-3 days, microwave to heat.
