Cookies Source: GFCF Recipes Ingredients: 1 1/2 cup tapioca or millet flour 1/2 tsp. salt 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. cinnamon or nutmeg or mace 1/2 tsp. cloves 1/2 cup sunflower seeds or nuts 1/2 cup margarine 1 cup packed brown sugar 2 eggs 1 cup poha 1 3/4 cup chopped fruit, apple, pear, banana, cherries 1/2 cup raisins, currants, dried blueberries, dried cranberries 1/2
c. pitted dates Instructions: 1. Stir together flour, salt, baking powder, baking soda, cinnamon
and cloves. 2. Add sunflower nuts and set aside. 3. In large bowl, beat margarine and sugar until smooth; beat
in eggs until blended. 4. Stir in flour mixture, poha, fruits. 5. Drop by teaspoons onto greased cookie sheet. 6. Bake at 350 degrees for 12 to 15 minutes or until lightly brown.
7. Remove cookies to rack to cool. 8. Makes 60 cookies. |
