To keep breads fresh & ready for use, slice cooled bread with an electric knife, bread knife, or unwaxed dental floss.  Insert a piece of wax paper between the slices before wrapping the full loaf well with aluminum foil.  Cover the foiled loaf in a heavy-duty plastic bag & place in the freezer.  Remove slices as needed; they will easily break apart & thaw rapidly (or place briefly in microwave for approximately 10 seconds).
