 Vanilla Fudge
Source: Diane Hartman,The Food Allergy Kitchen

Ingredients:
2 cups sugar
1/4 cup Dari Free powder + enough water to equal 3/4 cup of liquid or 3/4 cup soy milk
1/8 tsp cream of tartar
1 1/2 Tbsp margarine or cocoa butter<for a white chocolate flavor>
2 tsp vanilla extract
 
Instructions:
1.   Combine sugar, milk substitute, cream of tartar and margarine in a saucepan. 
2.  Stir over low heat until dissolved, remove spoon and attach a candy thermometer to the the pan, cook until the mixture reaches soft ball stage.  
3.  Remove from heat and allow to cool, add vanilla. 
4.  Beat with a high speed stand or hand mixer until thick and creamy. 
5.  Pour into well greased cookie pan or tray. 
6.  Score set fudge with a knife and then crack into pieces when completely cooled.
