Fiesta Chicken and Stuffing

3 eggs

3/4 cup milk substitute

2 cups crushed dried gluten free bread cubes

1-1/2 cup cubed, cooked chicken

1 large tomato, chopped

3 Tbsp chopped green chilies

3 Tbsp chopped green onions

Sour cream and salsa, optional

 
In a bowl, combine the eggs and milk. Stir in the dried bread cubes, chicken, tomato, chilies, and onions. Transfer to a greased microwave safe 9-inch pie plate. Cover with waxed paper. Microwave on high for 3 minutes; stir. Microwave for another 3 minutes; stir. Cook 2-3 minutes longer or until set and thermometer reads 160 degrees. Let stand for 5 minutes before serving. Garnish with sour cream and salsa if desired
