 Corn Bread

Ingredients:

2 cups fine white corn flour 
1 cup tapioca flour or any gluten free flour mix)
1 Tbsp  baking powder
1 tsp salt
1 small tomato chopped
1 Tbsp green onions chopped
1 Tbsp onion chopped
2 eggs
1/4 cup oil
1/2 cup water

 

Instructions:

1.  Preheat oven to 350 degrees F. 

2. In a bowl, combine corn flour, tapioca, salt and baking powder. 

3. Set aside. 

4. In another bowl, combine wet ingredients and beat with a wooden spoon.  

5. Add dry mixture and beat until well combined.

6. Transfer into prepared pan or muffin tins and bake until golden.
