 Ravishing Rhubarb Cake

Ingredients:
3 eggs
1/4 tsp salt
1 1/4 cups sugar
1 tsp vanilla
2 cups gluten free flour mixture
1 tsp xanthan gum
1 tsp baking soda
2 tsp cinnamon
1 cup plain soy yogurt
3 cups raw rhubarb, cut into 1/2-inch pieces
1/2 cup chopped walnuts
powdered sugar

Instructions:
1.   Preheat oven to 350º degree F. 
2.  Spray a 9x13 pan with cooking spray. 
3.  Beat eggs, salt, sugar, and vanilla in large bowl.
4.  Stir in flour, xanthan gum, soda, and cinnamon till moistened.  5.  Add yogurt, rhubarb, and nuts, and stir until well blended.  6.  Pour into prepared pan and bake 1 hour. 
7.  Cool.
8.  Dust with powdered sugar if desired.
