 Chocolate Chip Banana Bran Muffins

Preheat oven to 350.

In a small bowl mix thoroughly after each addition as listed:
2 eggs
1/4 cup dark brown sugar
1/4 cup bulk splenda (or 1/4 cup dark brown sugar)
1/3 cup milk or substitute (can use water)
individual serving size container apple sauce
2 lg or 3 med very ripe bananas, mashed
3/4 cup flaxseed meal (mock bran) 
In a large bowl sift together:
1-1/2 cup gluten free flour mix (I use a garbanzo mix)
2 tsp baking powder
1 tsp cinnamon
1/2 tsp xanthan gum
1/4 tsp salt
Spread dry mixture out slightly and sprinkle on top:
1/4 c mini chocolate chips (1/3-1/2 c regular sized ones if you can't get mini)

Pour wet over dry and mix till just combined, let sit 3 minutes. Spray 12 cup muffin tin with Pam. Spoon dough into tin. Bake 25-28 minutes, or until toothpick inserted into center comes out clean.
