 Pecan Sandy

Ingredients:

1 cup butter or margarine

1/2 cup powdered sugar

1 Tbsp vanilla extract

1 1/2 cups gluten free flour mixture

1/2 cup sweet rice flour

1 tsp xanthan gum

1 cup very finely chopped pecans

powdered sugar for rolling

Instructions:

1.  Sift together both flours and xanthan gum.

2.  Cream butter/margarine & powdered sugar, add vanilla.

3. Slowly add flour mixture. Beat for at least two minutes.

4. Stir in pecans.

5. Chill dough for at least 1 hour.

6. Roll into 1 inch balls (or a little smaller) and bake at 400 for 7-8 minutes. Do not let them brown!

7. Remove from oven, carefully roll in powdered sugar.

8. When completely cool, roll in powdered sugar again and store in airtight container.
