Cornstarch Bread

Source: GFCF Kids, Yahoo Groups

Ingredients:

2 1/2 cups cornstarch

1/3 cup potato starch

2 Tbsp rice flour

1 large egg white

4 1/2 tsp yeast

1/4 cup sugar

1 1/2 tsp xanthum gum

2 cups of hot water

2  1/2 Tbsp vegetable oil

1 1/2 tsp salt

Instructions:

1.   Preheat oven to 425 degrees F. 

2.   Combine flours, yeast, xanthum gum.

3.   Add water and egg to dry mixture.

4.   Using a hand or stand mixer, combine medium for 2 minutes.

5.   Cover and let rise for 15 minutes. 

6.   Spray loaf pans with cooking spray.  Use  4 1/2 X 8 pans.

7.   After bread mix rises, add oil and salt and mix on low until smooth

8.   Pour batter into pans.

9.   Cover with plastic wrap, let rise for 20-25 minutes (or until batter reaches the top of pan.

10.  Bake at 425 for 25 minutes, remove from oven, cover with towel for 10 minutes.

11.   Remove from pan and continue to cool on cooling rack.

12.  Slice at room temperature. 

*Note:  Bake in small loaves and freeze, if desired.
