 Heidi's Low-Sugar Cookie

Ingredients:

1  cup Brown Rice Flour

1/3 cup Tapioca Flour

2 Tbsp Maple Syrup

1 Tbsp Molasses (I use blackstrap)

3 Tbsp Canola Oil

1 Tbsp Milk free margarine

1 tsp Xanthan Gum

2 tsp Baking Powder

1/2 tsp baking soda

2 Tbsp apple cider Vinegar

3 - 4 Tbsp Brown Sugar or White Sugar

2 Tbsp Rice Milk/Water/Milk

1 tsp cinnamon

Instructions:

1.   Preheat oven to 350 degrees F.

2.  Mix all ingredients together in a bowl except the

vinegar.

3.  When well mixed, add the vinegar, don't over stir.

4.  Drop by teasponfuls onto lightly greased cookie sheet.  

5.  For decoration, put sprinkles on top.

Makes about 12 small cookies.

*Note: At the end of the mixing process, you can also add some safe chocolate chips.
