 Chocolate Snack Cake

Ingredients:
1 can black beans, drained and rinsed 
4 large eggs, separated
1/2 c sugar 
3 Tbsps cocoa powder  
1 Tbsp espresso powder in 1 Tbsp hot water
1 tsp baking powder
2 Tbsp butter, margarine, oil or applesauce 
1 tsp vanilla

Instructions:
1.   Preheat oven to 350 degrees F.
2.  Prepare an 8x8 baking pan by spraying it with non stick cooking spray.
3.  Blend all but whites and topping in food processor till smooth.
4.  Transfer to a bowl.
5.  Whip whites with a pinch of salt till stiff peaks form.
6.   Mix 1/3 into beans. Fold remaining whites in 2 portions. Streaks are okay.
7.   Pour into baking dish. Tap a couple times on counter.
8.   Sprinkle on topping if using.
9.   Bake 30 minutes.
10.  Cool 10 minutes before slicing.
