Emily's Chocolate Chip Cookies

Ingredients:

1 1/2 cups gluten free flour mixture

3/4 cups garfava or sorghum flour

1 cup creamed coconut oil

3/4 cup granulated sugar

3/4 cup brown sugar

1 tsp baking soda

2 eggs

1 tsp sea salt

1 tsp vanilla

3/4 cup chocolate chips

Instructions:

1.  Cream together coconut oil, sugars, eggs and vanilla.

2.  In another bowl combine dry ingredients, then slowly add to creamed mixture.

3.  Stir in chocolate chips and 1 tsp hot water.

4.  Drop by spoonful onto cookie sheets lined with silicone baking mats.

5.  Bake at 350 degrees for 10-12 minutes.

NOTE: It is important to cream the coconut oil before adding other ingredients. The garfava flour gives the cookie a buttery taste.
