 Chocolate Dipped Coconut Drops

Ingredients:

2 cups poha flakes

1 cup chocolate chips, melted

4 cups unsweetened coconut

2 cups brown rice flour

1/2 tsp vanilla extract

1/2 tsp almond extract

3/4 cup maple syrup

1 cup cooking oil

1/2 cup sweet rice flour or tapioca starch

 

Instructions: 

1.   Preheat oven to 350°F. 

2.   Blend oil, maple syrup, & extracts until smooth & thick. 

3.   Stir in brown rice flour, 2 cups coconut, & poha flakes until dough is well blended.  If dough is still too soft, add in ½ cup tapioca or sweet rice flour. 

4.   Place remaining shredded coconut in  large bowl and roll rounded tablespoons of dough into coconut. 

5.   Bake 14-16 min or until golden brown. 

6.   Cool completely. 

7.   Melt down chocolate using microwave or in double broiler over hot water. 

8.  Dip one end of cookie into melted chocolate. 

9.  Cool & serve.

 

Makes 48 cookies.
