 Banana Pecan Quick Bread

1/2 cup butter
3/4 cup sugar
2 eggs
3 overripe bananas
1 tsp vanilla or 1/2 tsp coconut flavoring
2 cups All Purpose GF Flour Mix
1 Tbsp. baking powder
1 cup pecans, finely ground

Preheat oven to 350 degrees F.  Cream margarine with sugar. Beat in eggs, bananas & flavoring. Blend in remaining dry ingredients and pecans for 1 minute. Pour batter into greased 5 x 9" loaf pan. Bake  for 1 hour Do not underbake.

ALL PURPOSE GF FLOUR MIX
1 c. brown rice flour
1 1/4 c. white rice flour
1/4 c. potato starch
2/3 c. tapioca starch
3/4 c. sweet rice flour
1/3 c. cornstarch
2 t. xanthan or guar gum
