          Crunchy Birthday Cookies

1/2 cup gfcf margarine
1/2 cup brown sugar
1/2 cup white sugar
1 large egg
1 tsp vanilla extract
1 cup gf flour blend
1/2 tsp soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp cinnamon
2 Tbsp ground flax seeds
2 Tbsp ground sesame seeds
1 cup quinoa flakes
1/2 cup amaranth flakes (or buckwheat or other)
1/2 cup coconut
1/2 cup chopped pecans

 
Preheat oven to 350 degrees F.  Cream margarine; add sugars, then egg and vanilla. Add combined dry ingredients and beat well. Stir in quinoa flakes, amaranth flakes, coconut and pecans. Drop by rounded tablespoonfuls onto cookie sheet. Bake for 10-13 minutes or until lightly browned.
