 Chewy Maple Cookies

Ingredients:
 
1/2 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup pure maple syrup
1/2 teaspoon vanilla extract or maple flavoring
1-1/2 cups GF flour mixture
2 teaspoons baking powder
1 teaspoon xanthan gum
1/2 teaspoon salt
1 cup shredded coconut

Instructions:
 
1.   Preheat oven to 375 degrees F. 
2.  In a mixing bowl, cream shortening and brown sugar until fluffy.
3.  Beat in the egg, syrup and vanilla until well mixed.
4.  Combine flour, baking powder, xanthan gum and salt; add to the creamed mixture.
5.  Stir in coconut.
6.  Drop by teaspoonfuls 2 inches apart onto greased baking sheets.
7.  Bake for about 10 minutes or until lightly browned.
8. These will brown quickly and will be chewy with a little less cooking time. More time makes them very crispy.
