            Savanah Chocolate Chewies

Ingredients:
2 cups of pecans
3 cups of confectioners sugar
2/3 cups unsifted, unsweentened cocoa powder 
1 tsp powdered (not granular) instant coffee or espresso
2 Tbsp gf flour mixture
pinch of salt
3 egg whites (xtra large or use 4 large)
1/2 tsp vanilla

Instructions:

1.   Preheat oven to 350 degrees -line cookie sheets with baking pan liner or with aluminum foil shiny side up. 
2.  Chop pecans finely.
3.  Place the sugar, cocoa, coffee, flour, salt, egg whites, and vanilla in a small bowl of electric mixer.
4.  Beat slowly at first and then on high for 1-2 minutes until the mix is shiny.
5.  Stir in the nuts.
6.  Spoon out as soon as possible.  Once they are spooned out they can wait before baking, but if they remain in the mixing bowl for any length of time, they will not be shiny when baked. 7.  Place 1 inch apart on baking sheet.
8.  Bake 15 minutes.
9.  Transfer to a rack to cool.
10. If you used foil, the cookies will have to stand on the foil until they can be lifted easily with your fingers or peeled off the foil. When done, they are dry and crisp on the outside and chewy on the inside.
