    Lemon Pound Cake
Source:  GFCF Recipes

 
Ingredients:
1 1/2 cups brown rice flour
2 Tbsp arrowroot powder
1 Tbsp baking powder
6 eggs -- separated
1/2 cup oil
1/3 cup lemon juice
1 Tbsp vanilla
5 Tbsp vegetable glycerin

Instructions:
1.   Mix dry ingredients in bowl. 
2.  Beat egg whites until stiff. 
3.  Beat egg yolk until thick, add oil, juice, vanilla and glycerin to yolks and mix well. 
4.  Add yolk mixture to dry ingredients and blend well. 
5.  Fold flour mixture into egg whites. 
6.  Pour batter into oiled angel food cake pan or 9" round pan.  7.  Bake at 350º degrees F for 35 minutes or until done. 
8.  Cool ten minutes and remove from pan.
