Mock Gluten Free Dairy  Free Oreo Cookies

1 bag Miss Roben's crunchy chocolate cookie mix
1 cup solid, unflavored shortening
4 cups confectioner's sugar
mini cookie or ice cream scooper(approx. 1 tsp size)
 
Preheat oven to 375 degrees F and prepare mix according to bag directions.  Scoop out dough with mini scoop onto greased cookie sheet(s), spaced 2" apart and flatten each with the bottom of a greased juice glass bottom(or plastic Oreo form).  Bake per bag instructions, allow to cool. 
 
Filling:
 
Cream shortening and sugar with electric mixer until smooth and scoop 1 tsp on 1/2 the cookies.  Top with plain cookie, pressing down lightly to get both cookie sides to stick to the filling.
