White Fluffy Frosting_ Frosting/Fillings*

Source: Miss Roben's

 

 

 

1 cup sugar

1/4 cup warm water

1/4 tsp cream of tartar

dash of salt

3 large egg whites

1 tsp vanilla extract

 

Combine all but vanilla extract in top of double boiler.  Place egg white mixture over barely simmering water in bottom of double broiler on stove. Beat mixture at high speed with hand mixer until stiff peaks form and candy thermometer registers 160 degrees F.  Add vanilla nd beat until blended. 

Yield: 4 cups
