 Gina's Gluten Free White Bread

Ingredients:

1 cup white rice flour
1 cup finely ground brown rice flour
 

1/2 cup tapioca starch
1/2 cup potato starch
1/3 cup corn starch
1 Tbsp xanthan gum
3 Tbsp sugar
1  1/2 tsp salt
1 Tbsp egg replacer
1 tsp gelatin
2/3 cup dry milk substitute powder(i.e. Dari Free)

1 Tbsp yeast
1/2 cup warm water
1 - 2 tsp honey
3 eggs
1/4 cup vegetable oil
1 tsp cider vinegar
1/2 to 3/4 cup warm water


Instructions:
1.    In a large mixing bowl, combine dry ingredients.

2.   In a small bowl dissolve the yeast in a 1/2 cup of warm water and honey.

3.   In medium bowl, mix the eggs, oil, vinegar, and 1/2 cup warm water(reserve remaing water to achieve the correct dough texture).

4.   Add the yeast, mix well.

5.   Pour over dry ingredients.

6.   Mix well with a stand or hand mixer.  

7.   If  the batter looks thick,  add remaining water.

8.   If it is too slurpy, you can hear a slurp-slurp sound as it mixes, add 1-2 Tbsp of corn flour or sweet rice flour.

9.   The correct dough texture is thick, not soupy. 

10.  Transfer batter into prepared pans.  

11.  Allow to rise for about 1 hr

12.  Preheat oven to 400 degrees F. 

13.  Bake for 15 minutes.

14.  Remove from oven and cool before removing from pan.
