 Peppermint Sticks

Ingredients:

2 cups sugar

1 /2 cup cane syrup, honey or corn syrup

1 /4 teaspoon cream of tartar

1 /2 cup water

1 teaspoon (or to taste) safe peppermint flavoring

Instructions:

1.   Combine ingredients in a saucepan, stirring occasionally, bring to boil.

2.   Remove spoon, and attach a candy thermometer to pan.

3.   Without stirring, allow mixture to reach crack stage.

4.   Remove from heat and allow to cool for 20-30 minutes.

5.   Transfer onto well greased slab or platter and pull until glossy.

6.   Form into sticks.

7.   If red and white colored candy canes are desired, divide mixture into two parts and tint as desired. Twist together two thin sticks to form colored canes.
