Pineapple Upside Down Cake 1 package Miss Roben's Yellow Cake Mix 3 large eggs or appropriate egg replacement 3/4 cup margarine or butter- for cake batter 3/4 cup brown sugar 1/2 cup margarine or butter, melted 1 - 20 ounce can unsweetened sliced pineapple, drained(save juice) Preheat oven to 350 degree F. Prepare yellow cake mix batter using eggs(or substitutes) and 1/2 cup of the reserved
pineapple juice. Stir brown sugar into melted butter and spread the mixture evely in bottom of 9 x 13 inch glass pan.
Arrange drained pineapple in one layer across bottom of pan. Pour batter over pineapple pieces. Bake 30-40 minutes
or until knife inserted into the center comes out clean(cover cake lightly with foil if browns on top before center is done).
Cool cake completely before inverting to serve. |
