Breakfast Bars

Follow * directions to make yeast free

 

1 bag Miss Roben's Animal Cookie Mis prepared into dough using freshly squeezed* orange juice instead of water

1 cup buckwheat or thin cut poha flakes

1 Tbsp calcium powder(available through Kirkman Labs)

1 Tbsp Nutriflax powder

1/3 cup ground pecans or other nuts, optional

1 cup raisins* or other dried fruit (*omit if yeast free)

1/4 cup unsweetened shredded coconut

1/3 cup rice bran

1/3 cup maple syrup or vegetable glycerin*

 

Preheat oven to 350 degrees F.  Spray cookie sheets with vegetable oil spray.  Blend all ingredients, except fruit and nuts, thoroughly together with stand up mixer.  Stir in nuts and fruit.  Drop by heaping Tbsp mixture onto greased cookie sheet, 2" apart and bake 10-12 minutes or until done.  To make bars, spread batter 1/2" thick onto 8-9" square or large greased pan and smear jam, top with second layer, sprinkle with extra flakes for textured look.  Bake same time and temperature and cut into bars.
