 Breakfast Bars

Note: Follow * directions to make yeast free

 

Ingredients:

1 bag Miss Roben's Animal Cookie Mix  prepared into dough using freshly squeezed* orange juice instead of water

1 cup buckwheat or thin cut poha flakes

1 Tbsp calcium powder(available through Kirkman Labs)

1 Tbsp Nutriflax powder

1/3 cup ground pecans or other nuts, optional

1 cup raisins* or other dried fruit (*omit if yeast free)

1/4 cup unsweetened shredded coconut

1/3 cup rice bran

1/3 cup maple syrup or vegetable glycerin

 

Instructions: 

1.  Preheat oven to 350 degrees F.
2. Spray cookie sheets with vegetable oil spray. 
3. Blend all ingredients, except fruit and nuts, thoroughly together with stand up mixer. 
4. Stir in nuts and fruit. 
5. Drop by heaping Tbsp onto greased cookie sheets, spacing approximately 2 " apart. 
6.  Bake 10-12 minutes or until done.   
7. To make bars, spread batter into 1/2 " thickness on 8 x 8 pan and smear jam, top with second layer, sprinke with extra flakes for textured. 
8.  Bake as you would for cookies, but extend time, as needed. 
9. Cool and cut into bars.
