Basic Tortilla Source: Jack & Laurie Tepe, Denver Metro,
CSA Newsletter Ingredients: 1/4 cup cornstarch(or use equal amounts arrowroot or mung bean starch) 1/4 cup tapioca starch 1/4 cup potato starch 1/4 cup white rice flour
1 1/2 tsp xanthan gum or guar gum 1 tsp baking powder 1 1/2 Tbsp oil 1/2 cup water, additional,
if needed Instructions: 1. Combine all ingredients in a tightly sealed container, shake to mix.
2. Add oil and water to dry mix, blend well. 3. Set batter aside for ten minutes. 4. Divide and shape dough into 10-12 balls. 5. Flatten balls slightly before placing into tortilla press. 6. Cook as instructed
per tortilla press. |
