Non-Dairy Topping

3/ 4 cup very cold, rice, soy, almond or Dari Free milk

1/ 2 cup granulated sugar

1 tsp unflavored unsweetened gelatin

2 Tbsp water

 

Place medium steel stainless mixer bowl and electric beaters in freezer for at least 1 hour.  Combine gelatin with water and microwave for 20 seconds.  Remove softened gelatin and allow to cool to room temperature.  Combine cold milk and sugar in mixing bowl and slowly add gelatin.  Beat on high speed until forms stiff peaks.  Use immediately.
