Quinoa Pudding 1 cup quinoa, rinsed 2 1/2 cup soymilk 1/8 tsp sea salt 2 Tbsp maple syrup, or agave syrup 2 Tbsp kudzu, dissolved 2 Tbsp cold water 1 Tbsp vanilla 1/2 tsp fresh grated nutmeg or ground cinnamon Put quinoa, soymilk and salt in a saucepan and bring to a boil. Cover and simmer for 20 minutes. Add sweetener. Mix well.
Add Kudzu, stirring constantly until mixture thickens. Add vanilla and spices. Top with your choice of topping or fruit. Delicious
warm or chilled. |
