 Millet Apple Cake

Source: Sharon Ross, The Food Allergy Kitchen

 

Ingredients:
4 cup diced or 3 cup shredded apple
1 cup fructose (or other granulated sweetener)
2/3 cup oil
1 tsp vanilla
2 small jars of fruit baby food (such as plums, etc.) or 1 scant cup
applesauce
2 tbs cider vinegar
1-1/2 cup each millet and tapioca flour
1 Tbsp xanthan
1/2 tsp salt
1 tbs baking powder
2 tsp baking soda
4 tsp cinnamon (or other spices)
optional: 1 cup raisins, dates and/or nuts

 

Instructions:
1.   Preheat oven to 325 degrees F.

2.  Combine apples and fructose; let stand 10 minutes.

3.  Blend oil, vinegar, vanilla, pureed fruit with the apple
mixture.

4.  Sift the dry ingredients, mix with the apple mixture.

5.  Stir in dried fruit and nuts. Put in a greased 9x13 pan and bake about 40 - 45 minutes.
