Egg free/Dairy Free Cheesecake

1 package silken tofu, drained

1/2 cup prepared Dari free or soy milk

1/2 cup sugar

1 Tbsp vanilla extract

1/4 cup light cane syrup or light corn syrup

Prepared mock graham cracker crust

 

 

In a blender, combine all ingredients until smooth and creamy.  Transfer ingredients into prepared pie crust and bake in 350 degree F preheated oven for 30 minutes or until edges are lightly golden and the center appears set.  Chill.  Top with strawberries or other fruit, if desired
