 Mock Ricotta

Ingredients:

 

1 pound firm tofu well mashed
1/3 to 1/2 cup  mayonnaise
1 Tbsp dried parsley
2 tsp dried basil
2 tsp garlic granules or powder
2 tsp onion granules or powder
1 tsp salt
1/8 to 1/4 cup nutritional yeast
juice of 1/2 small lemon or lime

Instructions:

 

1. Combine ingredients. 

2.  Stir into pasta and top with red sauce.
