Pumpkin Muffins

1 1/2 cup bean or rice flour blend

1/2 cup brown sugar

2 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. xanthan gum

1/4 tsp. salt

2 eggs

1/4 cup applesauce

1/2 cup water

1 cup canned pumpkin (Libby's brand)

1/2 cup raisins (optional)

Combine gluten-free flour mix, brown sugar, baking powder, cinnamon, xanthan gum, and salt. Add in eggs, applesauce, water, and pumpkin. Stir in raisins if desired.

Spoon into oil sprayed muffin pan. Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean.

Makes 12 muffins.
