 GFCF Fruit Pudding Cake

Ingredients:

1 gluten free white cake mix

16 oz. fresh or canned fruit*

optional for fresh or unsweetened fruit:

1/4 cup water

1/4 cup sugar

Instructions:

1.   Preheat oven to 350 degrees F. 

2.  Follow directions on cake mix.

3.  Pour cake batter into 2 qt. casserole dish, or round or square cake pan.

4.  Spoon fruit* over top of cake batter. Bake for 35 to 40 minutes.

*Optional for fresh fruit: Heat 1/4 cup water and sugar with fruit in pot until boiling gently, stirring often.
