 Lemon Bars

Source: Christel King, GFCF Kids, Yahoo Group

 

Ingredients:

1  1/2 stick margarine

1/2 cup confectioner's sugar

1  1/2 cup pie crust mix

 

Instructions:

1.  Preheat oven to 350 degrees F. 

2.  Combine ingredients, blend well.

3.  Press into bottom and sides of 9X13 pan.

4.  Bake for 15 minutes.

 

 Lemon Topping:

Ingredients:

2 eggs

1 cup sugar

1/4 tsp salt

6 Tbsp lemon juice

1 tsp baking powder

2 Tbsp potato starch or  corn starch

Instructions:

1.  Combine ingredients, mix well.

2. Pour into hot crust.

3. Return to oven for 30 minutes.

4. Cool Completely, sprinkle with confectioner's  sugar.

5. Cut into bars.

*Be careful with this recipe, oven temperatures vary, check it often. My last batch came out a little thinner and crunchier than normal.
