 Timbale or Rosette Cookies

*Important: Rosette irons are needed for these beautiful cookies. There are several interchangeable shapes for these cookies.

Ingredients:

2 eggs (or egg replacer)

2 teaspoons granulated sugar

pinch of salt

1 cup milk substitute

1 cup gluten free all purpose baking mix

vegetable oil for frying

powdered sugar for dusting

Instructions:

1.   Preheat a deep fryer or deep frying pan  with 2 " of oil covering the bottm, equipped with candy thermometer, to 375 degrees F. 

2.   Beat eggs, sugar, salt and milk substitute.

3.   Blend in gluten free all purpose baking mix, let stand 10 minutes.

4.    Place rosette iron into hot oil for 1 minute.

5.    Gently shake off excess oil.

6.    Immediately dip into batter, don't let the batter come over the top edge of the iron or the batter may not be able to release from the iron.

7.    Immerse batter-covered iron into hot oil.

8.    Gently, shake iron to loosen batter, be sure to keep batter in the oil.

9.    Fry about 1 minute or until golden.

10.  Remove with a slotted spoon and drain on paper towels.

11.   Re-heat iron in hot oil each time.

12.  Dust with powdered sugar.
