 Bread Machine Gluten-Free Bread

Ingredients:

1  1/2 cups water, warm (110 to 115 degrees F)

3 large eggs

1/4 cup olive oil

1/2 cup garbanzo bean flour (Besan)

1/2 cup millet flour

1 cup white rice flour

1 cup potato starch or arrowroot starch

1/2 cup tapioca starch

1 Tbsp xanthan gum

1 1/2 tsp salt

2 Tbsp sugar

2 1/4 tsp yeast

Instructions:

1.  In a mixing bowl, combine eggs, oil and warm water.

2. In a seperate bowl, combine dry ingredients and sift well.

3. Combine the liquid and dry ingredients, blending until smooth.

4. Transfer into bread machine pan. 

5. Select dough cycle 1  1/2  pound loaf.   A rise cycle is not necessary, use the blend/mix cycle and then proceed to bake cycle.  Many bread machines have a quick bread option, which can be used for this particular recipe.   

6. Remove promptly when finished.

7. Cool completely before slicing.
