Sweet Potato Cookies

Makes aboout 14 cookies

Ingredients:

5 ounces lite firm tofu, pureed

1 small yam, baked

4 ounces applesauce

1/2 cup raisins

1/4 cup sugar

1/2 cup flour

1 tablespoon lemon zest

1 teaspoon cinnamon

1 teaspoon baking powder

1/4 teaspoon cardamom

Instructions:

Peel the baked yam and mash it. You should have about 3/4 cup of mashed yam. Mix the mashed yam with the rest of ingredients. Grease a cookie sheet. Drop about a tablespoon of dough onto a cookie sheet. (About 14 times). Bake in a 375° degree oven for about 40 minutes. Serve hot or cold.
