Turkey Burritos

1 cup mild salsa picante

8 ounces cooked turkey -- cut into 1/4" thick julienne strips

16 ounces refried beans

8 gluten free flour tortillas or flatbread

1/2 cup chopped tomatoes

 1/2 cup shredded soymage cheese

guacamole and/or  gluten free/casein free sour cream

Pour 1/3 cup salsa over turkey strips. Cover and marinate in refrigerator for 1 hour. Preheat oven to 350 degrees. In small saucepan, heat beans with remaining salsa, stirring constantly. Heat tortillas in dry skillet or in foil in oven. Spoon bean mixture down center of each tortilla. Top with turkey, tomatoes and cheese. Fold one edge of each tortilla over filling. Fold in sides and roll. Put filled tortillas on baking sheet seam side down and bake for 10 minutes or until cheese is melted. Top each burrito with guacamole and sour cream before serving.
