Easy Strawberry Pie

1 baked gluten free pie shell, or gluten free cookie crust

2 pints strawberries

1/4 cup glycerin

3 Tbsp corn starch

1/4 cup water

1 envelope Knox gelatin

Crush 1 pint strawberries and place in a saucepan. Add glycerin, water, gelatin and corn starch. Stir and bring to a boil. Boil 1 minute. While mixture cools, slice remaining pint of berries and place in pie shell. Pour cooked berries on top and refrigerate. Good served with a dollop of dairy free whipped topping.
