Squash Patties

4 cups yellow squash -- grated

1/2 cup chopped onion

2 tsp honey or brown sugar

1/2 tsp salt

3/4 cup gluten free flour mixture

1/2 cup cornmeal

2 eggs -- beaten

1/4 tsp pepper

3 Tbsp shortening

Mix squash, onion: sugar and salt in bowl. Let Stand for 30 minutes; drain. Stir in flour, cornmeal, eggs and pepper. Heat shortening in skillet until hot. Drop squash mixture by tablespoonfuls into hot shortening. Fry patties until golden brown on both sides, turning once or twice; drain. Serve immediately.
